A complete uninstall, reboot, followed up by a new install of VMware Tools fixed it.
There are now more files in that particular folder, seems like windows had files open and deleted them during a reboot after the automated update.
As I'm seeing problems with the copy&paste integration with a Windows XP VM as well I think I know now how-to fix that problem there as well

edit: Not sure how much it is worth, but disk data Transfer rate has taken a dive in performance as well. From 7.3 down to 5.9 and that's with Fusion debug mode disabled. The VM virtual disk runs off a intel SSD. I understand that the preview does not always give a good idea about performance, but figured it might be useful to know especially as the other numbers are still the same as in Fusion 5.
